Desserts can be fruit that is allowed, Yam or cake
(recipe is listed below).
The yam is washed and placed in a pot cut in quarters, large circles
or halves with skin left on. It can be sweetened with brown sugar
– to taste in moderation. The yam can also be placed in a
baking sheet and placed in the oven at 350o until tender in the
middle.
Acorn Squash
1 Acorn squash
8 oz of orange juice
1 apple (granny smith, fuji, pink lady)
1/4 cup of raisins (if desires)
1 teaspoon of brown sugar or honey (if desired)
Preheat oven to 350o Fahrenheit. Half the squash and take out the
seeds. In a glass baking dish place the squash halves facing down
and add the 8 oz of juice. Bake for 45 minutes. Core the apple and
cube (leaving on the skin). In a small bowl mix the apples, raisins
(if desired) and sugar/honey (if desired). Once this is well mixed
then take out the squash from the oven once the squash is tender.
Turn the squash right side up and add the apple mixture into the
squash and bake for an additional 10-15 minutes (until apple is
tender). Once baked extract from oven and let cool a little before
eating.
Banana Cake
3 Bananas
1C Ground Oatmeal
1C Whole oatmeal
Honey to taste
Molasses to taste
Raisins (optional)
The bananas are mashed until a paste is made. The remaining ingredients
are incorporated. The mixture is then molded into a bread pan and
baked in a 350o oven for 30 minutes. To make sure that the cake
is done, insert a fork in the middle to test. Once there is no mixture
on fork then the cake is taken out of the oven and left to cool.
Carrot Salad with Raisins
Carrots – sliced to preference
Orange juice
Raisins
Brown sugar – a pinch just for added taste
The carrots are sliced and placed in a bowl with the orange juice,
raisins and brown sugar. Please note that sugar is added depending
on taste but should be used sparingly.
Rice Pudding
1/2C of rice
2C of water
1/4C of brown sugar
2C of raisins (or raisins to taste)
The rice is washed, drained and then placed in a pot with water.
When the water reaches boiling point the brown sugar and raisins
are added. The heat is placed very low until the rice is cooked.
Refrigerate and serve when cool.
